My Toddler (and husband) loved this Cheeseburger Casserole from Skinnytaste.com.
I have been trying to cook a little healthier; healthier meals are not always toddler and husband approved but this one was a hit. I knew it would be… meat, cheese, noodles… I left the pickles off. Would totally make this again! So easy!
I think my biggest complaint is that it uses 2 TBSP of tomato paste. I hate opening up a can of tomato paste to only use a small part of it. Solution, I also made up some homemade pizza sauce and stuck it in the freezer for later. Super easy. I make a lot of homemade pizza so this is a great solution for me. Bonus: toddler LOVES pizza.
I made these cauliflower tots to go with dinner. I made them with my toddler in mind, he really seem to enjoy them. I wouldn’t say he loved them but he ate two at least. They were a bit of work but overall not hard.
They look like hashbrowns. I honestly thought he would gobble them up like he does with tater tots. Guess you can’t fool a 1 year old! But eating two is still a big success in my books.
I used my food processor to chop up the cauliflower and onion. I feel like that made them a little easier. I left out the parsley because I didn’t have any. Also, I don’t really like parsley.
Tried this Fried Rice recipe from gimmesomeoven.com last night and it was so good. I did make a few small changes – I left out the sesame oil and used mixed veggies instead of peas. I also added a little bit of leftover BBQ pork.
I have made fried rice before but this one turned out way better. I think it was the addition of the oyster sauce. Or maybe it was the cooking in better. Either way it was great!
