What’s For Dinner: Homemade Perogies, BBQ Naan, Hummus and Veggies

Meatless Monday!

Occasionally I participate in Meatless “Monday”… but I don’t always do it on a Monday. In fact, I made this meal on a Wednesday… Meatless Wednesday can be a thing right?

Homemade perogies, homemade BBQ naan, homemade hummus, veggies and sour cream. This was a fun mixed dinner – all delicious – but did take some time to make.

Homemade perogies are easy but time consuming. First you have to make your dough and filling. Advice, let your dough sit for a while before rolling out. I used to always skip this step not realizing it made it harder to roll out… much easier if you let it sit! Rolling and cutting out the dough sucks. Honestly, if you are going to make homemade perogies just make what you need – I always make too many and it takes too long. But they are soooo good. I always just use whatever dough comes up in google; this one works pretty good. For my perogie filling I use mashed potatoes with onions, I skip the cheese.

Homemade naan is something I only recently tried. It is delicious and not too hard. Sometimes I cook it in a frying pan and that takes forever. Recently I tried cooking it on the BBQ and it came out great and cooks up WAY faster. I can cook 6 or so pieces at once this way and it adds a nice flavour. I use this recipe and it turns out great everytime. Sometimes I add garlic, sometimes I forget – both are good. I also don’t butter every piece (I use oil), just the first few when cooking on the BBQ or every 5 or so when cooking one at a time in a pan.

My hummus recipe changes every time. Chickpeas, oil, lemon juice, garlic, paprika, salt, etc. Put in food processor/blender, blend and you have hummus. Pretty easy.
